You might consider sensory integration because many, many children with intellectual disabilities have these issues. It has been my experience when watching adapted PE teachers, is that they do not task analyze a skill and build on it, but do a different thing every time. One day they will have a child walk a beam and the next day roll a ball.

How about developing a scope and sequence for teaching games that develop sensory integration so that kids develop better balance and hand eye coordination. This would serve not only their recreational needs but would make them more functional in society. I am appalled at what our APE people do, having once taught PE.
